Ingredients

Butter, softened
1 c
sugar
3 U
eggs
1 cn
apricot halves, chopped or 1 jar (6 ounce) baby apricots
2 c
flour
1⁄2 t
baking powder
1⁄2 t
ground ginger
1⁄2 t
nutmeg

Directions

Preheat oven to 350°F. In large mixing bowl, cream butter and sugar. Beat in eggs one at a time. Stir in apricots. Mix in remaining ingredients. Pour into 9" x 5" loaf pan or bundt pan. Bake for about 1 hour or until cake tester inserted in center comes out clean.
