Big Soft Ginger Cookies

all purpose flour
2 t
ginger
1 t
baking soda
3⁄4 t
cinnamon
1⁄4 t
ground cloves
1⁄4 t
salt (optional)
3⁄4 c
Butter
1 c
sugar
1⁄4 c
molasses
2 T
sugar
1 U
egg

Directions

Preheat oven to 350°F. Combine first 6 dry ingredients. Set aside. In a large mixing bowl, beat the butter with an electric mixer on low speed until soft. Gradually add 1 C sugar and beat until fluffy. Add the egg and molasses and beat well. Stir the dry ingredients into the beaten mixture. Shape into balls of about 1 heaping tablespoon of dough each. Roll the balls in sugar and place them on an ungreased cookie sheet about 2-1/2" apart. Bake in a 350 °F oven about 10 minutes or until light brown and still puffed. Do not overbake. Let them stand for 2 minutes before transferring to a wire rack to cool. 2 1/2 dozen.
