Ingredients

3 lb
red cabbage, cored and shredded
1 1⁄2 c
beef stock
1⁄2 c
light brown sugar
1⁄2 c
rice wine vinegar
2 U
shallots, chopped
1⁄2 t
caraway seeds
4 T
Butter
2 U
bay leaves
  U
Salt & Pepper to taste

Directions

Combine all the ingredients, except the salt and pepper, in a 10-quart pot. Bring to a boil. Reduce the heat; cover and simmer over low heat, stirring occasionally, for 1 hour. Season with salt and pepper and serve hot. 6-8 servings.
