Grilled Tarragon Vegetable Parcels

Ingredients

sliced carrots, blanched
1 c
broccoli, blanched
1 c
cauliflower florets, blanched
1 c
sliced zucchini
1⁄2 c
thinly sliced red onion
1⁄2 c
Butter
1⁄2 c
fresh tarragon leaves
1⁄4 t
grated lemon zest

cracked black pepper

Directions

Divide vegetables evenly among 6 squares of foil (12"). In processor, blend butter, tarragon, lemon zest and pepper. Top each vegetable portion with 1 heaping tablespoon tarragon butter mixture. Seal foil. Place on grill until hot, about 10 minutes.
