Ingredients

baking soda
1 c
Butter
2 3⁄4 c
sugar
4 U
eggs
1 t
vanilla
1 c
buttermilk
1 T
grated lemon rind (optional)

Directions

Preheat oven to 350°F. Cream butter and sugar until smooth. Add eggs, beating well on high speed until light and fluffy. On low speed, alternately add buttermilk and dry ingredients. Pour into greased and floured tube or loaf pan. Bake at 350°F for 1 hour and 10 minutes.
