Armenian Rice Pilaf

Ingredients

4 T
Butter
3 c
chicken broth
1⁄3 c
crushed vermicelli or fine egg noodles
1 t
salt
1 c
long grain rice
1⁄4 t
pepper

Directions

Melt butter in a pot with a tight lid. Add pasta to melted butter. Stir constantly on medium heat until pasta turns medium brown. Add rice, salt, pepper, and chicken broth. Stir and put lid on pot. Cook on high until broth comes to a boil. Watch carefully. When broth boils, reduce heat to lowest point and simmer with lid on for 15 minutes. Remove lid and stir rice. Replace lid and continue to simmer for 15 more minutes.
