Tarragon Zucchini Fans

Ingredients

small zucchini, cut into length-wise slices, leaving attached at the stem end
6 T
Butter, melted
1 T
tarragon leaves, crushed
1⁄8 t
cracked pepper
1⁄4 c
water
2 T
shredded Parmesan cheese

Directions

Preheat oven to 400°F. Place zucchini in shallow baking pan; fan slices out. Combine butter, tarragon and pepper. Brush fans with mixture. Add water to pan. Bake for 15 minutes. Top with cheese and bake 5 minutes longer until zucchini is crisp-tender and cheese is melted.
