Butter

eggplant, cubed
2 U
onions, diced
3 U
zucchini, cubed
1 lb
potatoes, cubed
1 cn
plum tomatoes, diced
2 clv
garlic, minced
2 T
parsley, chopped
2 T
oregano, chopped fine
1 c
seasoned bread crumbs

Directions

Preheat oven 350ºF. Grease baking dish with butter. In the baking dish, combine all ingredients, except the breadcrumbs, and mix together. After all ingredients are mixed well, top with bread crumbs and dot with remaining butter. Bake for approximately 1 hour or until potatoes are soft (fork tender).
