Cranberry Chocolate Biscotti

Ingredients

2 1⁄4 c
all-purpose flour
1 1⁄2 t
baking powder
  pn
salt
1 U
stick butter, salted
1⁄2 c
packed brown sugar
2 U
eggs
1 t
vanilla
1⁄2 c
dried cranberries
2 T
grated orange rind
4 T
cocoa powder
2 oz
2 ounces chocolate melted with 1 t vegetable oil

Directions

Heat oven to 375°F. Grease baking sheet or use non-stick aluminum foil. Mix flour, baking powder, salt in bowl. Beat butter and sugar in second bowl until creamy.  Beat in eggs. Add vanilla. Stir in flour mixture. Stir in cranberries and orange rind. Knead cocoa into dough. Using floured hands roll dough in two 14" logs. Place on baking sheet and flatten each roll to 2" wide. Bake in 375°F oven 20 minutes or until lightly browned. Remove to wire rack to cool. Lower to 325°F. Cut loaves into 3/4" thick slices. Place cut side down on sheet. Bake 10 minutes. Turn over and bake 10 more minutes.  Cool on rack. Drizzle with melted chocolate.
