Preheat oven to 375°F. Mix butter, sugars, extract and egg for three minutes. Stir in flour and baking soda. Stir in coconut and nuts. Drop by heaping teaspoonfuls onto ungreased cookie sheets, about 2" apart. Bake until light brown, 8-10 minutes. Centers will be soft. Remove from cookie sheet and cool for 10 minutes before storing.
