Ginger Soy Butter Sauce

Ingredients

1⁄2 c
soy sauce
1⁄3 c
honey
1 T
brown sugar
1 oz
ginger, minced
1 T
minced garlic
1 T
shallots, minced
1 lb
unsalted butter, cold, cubed

juice of one orange

salt and pepper to taste

Directions

In a saucepan, combine first six ingredients. Bring the liquid to a boil and simmer for 5-6 minutes or until sauce is dark in color and reduced by half. Remove from heat and whisk in the cold butter cubes, a few at a time. This will thicken the sauce. Stir in the orange juice and strain through a chinoise. Season with salt and pepper.
