Baked Stuffed Scallops

2 lb
sea scallops
1⁄3 c
white wine
  U
juice of 2 fresh lemons
1 t
salt
1⁄2 t
pepper
1⁄2 t
lemon thyme
1 1⁄2 c
cracker crumbs
1⁄2 c
Locatelli or Parmesan cheese
2⁄3 c
Butter

Directions

Preheat oven to 325°F. Rinse scallops under cool water and drain well. Place in 9" x 13" glass baking dish in a single layer. Mix next five ingredients and pour over scallops. Mix cracker crumbs and cheese and spread evenly to cover all scallops. Pour melted butter evenly over crackers. Cover with aluminum foil and bake in a preheated 325°F oven for 15-20 minutes. Remove foil and broil for 1-3 minutes until light brown.
