Chocolate Almond Cookies

bittersweet chocolate, finely chopped

blanched almonds, toasted
1⁄2 c
all purpose flour

baking powder
1⁄2 t
coarse salt
1⁄2 c
butter, unsalted, softened

packed light brown sugar

large eggs
1 t
pure vanilla extract

confectioners sugar


Preheat oven to 350ºF. In a double boiler melt chocolate. Let cool slightly. In a food processor, pulse almonds until finely chopped. Combine almonds in a bowl with flour, baking powder, and salt. In a separate bowl, beat butter and brown sugar with an electric mixer until fluffy. Add eggs and vanilla. Mix in chocolate and add almond flour mixture. Cover and chill for 1 hour. Shape dough into 1" balls. Roll in sugar to coat, then in confectioners' sugar. Arrange on parchment lined baking sheets. Bake 15-20 minutes or until surface cracks and let cool.
