Pureed Pleasure Pea Soup

Ingredients

Butter
1 c
thinly sliced onion
4 c
chicken broth
1 c
diced potato
2 c
fresh or frozen peas
3 c
fresh stemmed spinach
1⁄2 c
heavy cream

Directions

In saucepan, melt butter; cook onion until tender. Add broth, potato, and peas. Simmer about 10 minutes until potato is tender. Add spinach and cook just until spinach is wilted. Puree soup in blender or processor; return to pan. Add cream; heat through. Garnish with fresh mint if desired.
