Ingredients

Butter

carrots, chopped
3⁄4 c
onion, chopped
4 c
chicken broth
3 c
heavy cream
2 T
orange juice concentrate
1 t
grated fresh ginger
1 t
tarragon leaves

salt and pepper to taste

Directions

In saucepan, melt butter; stir in carrots and onion. Cook until tender. Add remaining ingredients. Simmer 15 minutes. In blender or food processor, puree until smooth. Serve immediately.
