shelled shrimp (retain tail section)

fresh pineapple chunks

or sliced nectarines

green onion sliced
1⁄4 c
Butter, melted
1⁄4 c
apricot preserves
2 T
fresh lemon juice
1 t
soy sauce
1⁄4 t
ginger

Directions

Thread first 5 ingredients in an alternating order onto small bamboo skewers. Mix remaining ingredients and baste items on skewers. Grill or broil until golden brown. 4-6 servings.
