2 lb. Yukon Gold potatoes, peeled and cut into uniform pieces
½ cup milk
½ stick Keller’s Creamery Salted Butter, cubed
Salt & Pepper, to taste
Place potatoes into a large pot and cover with cold water. Bring to a boil then reduce heat to simmering. Cook 30 minutes or until potatoes are soft but not falling apart. Drain and return potatoes to pot.
Heat milk with butter in the microwave for 30 seconds or until butter melts.
Mash the potatoes using a ricer, food mill or a potato masher. Beat in milk mixture until potatoes reach a creamy consistency. Season with salt and pepper to taste. Top with additional butter, if desired.
